A few years ago, my artsy and awesome friend, Heather, invited me over for an Autumn dinner. Never one to decline a free meal, I enthusiastically accepted her invitation to dine. Who knew that over the next few years, the meal she prepared would become a sensational seasonal staple (Alliteration, anyone?). Every autumn since our wonderful dinner, I make her most delectable dish. I've since slightly changed it and made it my own over the years and it's become something I crave during this season.
Here it is:
Roasted (and buttered) acorn squash (cut in half) filled with a mixture of carmelized onions, mushrooms, shredded zucchini, apples, pumpkin seeds, cheddar cheese and quinoa. My picture below doesn't quite look like the most tasty thing.

But trust me, and not the camera phone; it's autumn in your mouth.
So Heather, thanks. I always think of you while inhaling my squash. :)
